February can be a hard month. Winter lingers and new year resolutions may have gone by the wayside. Love yourself with a heartwarming soup. Unless you are warm, well and take time for you, you're not going to create with your heart and soul.
1/2 red pepper in thin strips
Finely chopped garlic clove and equal amount of ginger
Thinly sliced carrot
Handful of spinach/mangetout/finely sliced broccoli
A nest of noodles (egg noodles or buckwheat noodles)
1 tbsp miso paste (or a tsp of stock powder)
Soy sauce to taste
A squeeze of lemon or lime
A sprinkle of chilli flakes to taste.
Heat the water in a pan, add the noodles and cook for two minutes. Add the chopped pepper, carrot, garlic and ginger. Leave to simmer for two minutes. Turn off the heat. Add the miso paste, chopped greens, lemon and soy. Sprinkle with chilli flakes.
Eat and feel heartwarmed and ready for anything.
